Chilled Cucumber Soup

This chilled cucumber soup recipe consists of cucumbers, green onion, vegetable stock, plain yogurt, sour cream and Lemon Wasabi Sauce.

Ingredients

  • 2 lbs. Cucumber, peeled, seeded, diced
  • 2 Tbsp. Green onion, diced
  • 1/2 cup Vegetable stock
  • 1 cup Plain yogurt
  • 1/2 cup Sour cream
  • 3 Tbsp. Robert Rothschild Farm Lemon Wasabi Sauce
  • Salt and pepper to taste
  • Sour cream
  • Avocado
  • Directions
    1. In a food processor, puree the cucumbers, green onion, vegetable stock, yogurt, sour cream, Lemon Wasabi Sauce and salt and pepper. You may need to puree in batches. Pour into a large bowl and chill in refrigerator.
    2. To serve, pour soup into bowls. Add a dollop of sour cream and a few slices of fresh avocado.
    3. To reduce calories, use plain yogurt instead of the sour cream.
