Chilled Carrot Soup Sippers

These little sippers consisting of carrot juice, green onion, vegetable stock, plain yogurt and Ginger Wasabi Sauce will give you a much needed kick.

Ingredients

  • 1 1/2 cups Carrot juice
  • 1 Tbsp. Green onion, diced
  • 1/2 cup Vegetable stock
  • 1/2 cup Plain yogurt
  • 2 1/2 tsp. Robert Rothschild Farm Ginger Wasabi Sauce
  • Salt and pepper to taste
  • Directions
    1. In a food processor, puree the carrot juice, green onion, vegetable stock, yogurt, Ginger Wasabi Sauce, salt and pepper (may need to puree in batches). Strain through a sieve into a large bowl. Chill in refrigerator for at least 30 minutes.
    2. To serve, pour soup in very small cups, espresso cups or shot glasses. Place on a platter to serve. Yields: 2 1/2 cups of soup.
