Chicken and Peanut Noodle Salad

A wonderful Asian-style salad featuring our Asian Sesame Oven & Grill Sauce.

Ingredients

  • 2 Tbsp. Oil
  • 2 Chicken breasts, boneless
  • Salt and pepper to taste
  • 1 tsp. Oil
  • 1 Tbsp. Jalapeno, finely minced
  • 2 Tbsp. Robert Rothschild Farm Asian Sesame Oven & Grill Sauce
  • 1/4 cup Soy sauce
  • 1/4 cup Chicken stock
  • 1 Tbsp. Fish sauce
  • 2 Tbsp. Lime juice
  • 2 tsp. Sugar
  • 1/2 cup Peanut butter
  • 1 lb. Soba noodles
  • Green onions, diced
  • Snow peas, blanched
  • 1 Broccoli, steamed
  • Directions
    1. Chicken: Heat oil in a frying pan. Cut chicken into small strips or pieces and season with salt and pepper. Cook completely in frying pan and remove.
    2. Sauce: Heat oil in a saucepan. Add jalapeno and cook for 1 minute. Add Asian Sesame Oven & Grill Sauce, soy sauce, chicken stock, fish sauce, lime juice, and sugar -- bring to boil. Reduce to simmer and whisk in peanut butter to form a good emulsion.
    3. Finish: Add sauce and chicken to noodles and mix well. Top with green onions. Favorite vegetables such as snow peas and broccoli add a nice touch to this dish. Serve warm or cold.
