Chicken Salsa Appetizer

A mouth-watering appetizer featuring our Cilantro Lime Salsa.

Ingredients

  • 2 Chicken breasts
  • 2 Tbsp. Oil
  • 1 tsp. Garlic powder
  • 1 Tbsp. Peppercorn, freshly ground
  • 1/2 cup Swiss cheese, shredded
  • 1/2 cup Cheddar cheese, shredded
  • 3/4 cup Robert Rothschild Farm Cilantro Lime Salsa
  • 1 bag Robert Rothschild Farm Tortilla Chips
  • Directions
    1. Use a large pasta bowl (oven safe) and place chips generously to fill bowl. Sprinkle with swiss and cheddar cheeses. Set aside.
    2. Cut chicken into strips, saute in oil, garlic and pepper. Place chicken on Tortilla Chips and cheese. Put in 350 degrees F oven until cheese melts. Remove. Add scallions and Cilantro Lime Salsa. Serves 6-10.
