Chick Pea Salad

A wonderful salad recipe consisting of red onion, red and yellow peppers, chick peas, wild rice and our Sweet Heat Pretzel Dip.

Ingredients

  • 2 Tbsp. Olive oil
  • 1/2 cup Red onion, diced
  • 1/2 cup Roasted red and yellow peppers, diced
  • 19 oz. Chick peas, drained, rinsed
  • 2/3 cup Robert Rothschild Farm Sweet Heat Pretzel Dip
  • 1 1/2 cups Wild rice, cooked
  • Salt and pepper to taste
  • Directions
    1. Heat oil in a large sauté pan. Sauté onions until lightly caramelized. Add diced peppers and cook an additional 2 minutes.
    2. Remove onions and peppers from pan and place in a large serving bowl. Add a little more oil to the pan if needed and heat until very hot. Add chick peas and fry until lightly browned (4-5 minutes). Add the Sweet Heat Pretzel Dip and continue to cook for another 1-2 minutes.
    3. Remove from heat and combine with onions and peppers. Add the cooked wild rice and season with salt and pepper. Serve warm by heaping onto ceramic Chinese soup spoons.
