Caribbean Stuffed Potato Pancakes

A wonderful potato pancake recipe made all the better with our Caribbean Jerk Rub.

Ingredients

  • 2 lbs. Potatoes, shredded
  • 3 Tbsp. Robert Rothschild Farm Caribbean Jerk Rub
  • 1/4 cup Flour
  • 2 tsp. Baking powder
  • 2 large Eggs
  • 8 oz. Cream cheese
  • 6 oz. Cheddar cheese, shredded
  • 1/4 cup Green onion, diced
  • Oil
  • Directions
    1. Mix potatoes, Caribbean Jerk Rub, flour, baking powder and eggs in a mixing bowl until fully incorporated. Set aside. Mix cream cheese and shredded cheddar cheese with onion.
    2. Heat 1/8 inch of oil in a pan. Spoon 1/4 cup of mixture into hot oil. Spread gently.
    3. While cakes are cooking, top each one with one tablespoon of cheese mixture. Gently press into cake with the back of a spoon. Spread one more tablespoon of potato mixture on top of cheese and turn the potato cakes over.
    4. Finish cooking until potato cakes are golden brown and cheese is melted.
    5. These are great served with Robert Rothschild Farm Chipotle Ranch Dressing.
