Caribbean Halibut Rolls

A tasty halibut recipe featuring two Robert Rothschild Farm products - Caribbean Jerk Rub and Champagne Garlic Honey Mustard Pretzel Dip.

Ingredients

  • 6 filets Halibut, small
  • 1/2 cup Robert Rothschild Farm Caribbean Jerk Rub
  • 1 cup Sweet potatoes, canned, chopped
  • 1 cup Wild rice, prepared
  • 1/2 cup Red peppers, diced
  • 1/2 cup Onions, diced
  • 1/4 cup Robert Rothschild Farm Champagne Garlic Honey Mustard Pretzel Dip
  • Directions
    1. Coat filets in Caribbean Jerk Rub and set aside.
    2. Mix the rest of the ingredients in a bowl until fully incorporated. Place 1/2 cup of filling in each fish and wrap around to make a circle. Place in a greased muffin pan.
    3. Bake at 350 degrees F for 15 minutes, or until fish is done and the filling is fully heated through.
    4. Serve with Robert Rothschild Farm Champagne Garlic Honey Mustard Pretzel Dip.
