Broccoli Bow Tie Pasta

A wonderful pasta containing onion and red pepper and featuring a mixture of mayonnaise and Champagne Garlic Mustard as a tasty dressing.

Ingredients

  • 8 oz. Bow tie pasta
  • 1 lb. Broccoli florets
  • 1 medium Onion, finely chopped
  • 1 Red pepper, chopped
  • 2/3 cup Mayonnaise
  • 1/4 cup Robert Rothschild Farm Champagne Garlic Mustard
  • 2-3 Tbsp. Milk
  • 1/2 cup Walnuts, halved
  • As desired Freshly ground pepper
  • Directions
    1. In a large sauce pan, cook pasta in boiling water for 5 minutes. Add broccoli and cook 5 minutes more. Drain. Rinse with cold water, drain again. Transfer pasta and broccoli to a large bowl and toss with onions and red pepper.
    2. In a small bowl mix mayonnaise and Champagne Garlic Mustard. Pour dressing over pasta mixture. Toss lightly to coat. Cover and chill at least four hours or overnight.
    3. Before serving, if necessary, stir in milk to moisten and top with halved walnuts. Sprinkle with pepper. Yields 8 servings.
