Banana Bread PB&J Sandwich

This PB&J sandwich is made all the better with our tasty Cherry Acai Preserves.

Ingredients

  • 1 1/2 cups Flour
  • 1/2 tsp. Salt
  • 1 1/2 tsp. Baking soda
  • 1/2 cup Butter, softened
  • 3/4 cup Sugar
  • 2 Eggs
  • 1/2 tsp. Vanilla extract
  • 3 Bananas, mashed
  • 2 Tbsp. Butter
  • Peanut butter
  • Robert Rothschild Farm Cherry Acai Preserves
  • Vanilla ice cream
  • Directions
    1. In a mixing bowl, sift together the flour, salt and baking soda.
    2. In a mixer, cream the butter and sugar until well combined. While still mixing butter, add eggs 1 at a time. Once combined add vanilla extract. Blend until semi smooth.
    3. Add bananas and continue mixing. Add sifted flour mixture to batter and mix until well combined.
    4. Grease a bread loaf pan with butter. Pour bread batter into pan. Place cake in a preheated 350 degrees F oven and bake for approximately 60-70 minutes. Check for doneness by inserting a toothpick and removing it clean. Remove from oven and cool completely.
    5. To serve, place a slice of bread in middle of a plate. Spread a generous layer of peanut butter on top. Spread a layer of Cherry Açaí Preserves over peanut butter. Top with a scoop of vanilla ice cream.
