Avocado and Manchego Salad with Black Bean Dressing

A tasty salad, place in an avocado, and drizzled with a vinaigrette featuring our Black Bean Dip.

Ingredients

  • Robert Rothschild Farm Black Bean Dip
  • 1/3 cup Olive oil, divided
  • 3 Tbsp. Sherry vinegar
  • 4 cups Packed spicy salad greens, cleaned
  • 1/4 lb. Manchego cheese, rind removed, planed
  • 4 Ripe California avocado, halved, seeds removed
  • Directions
    1. Whisk together vinegar, Black Bean Dip and a pinch of salt and pepper until smooth. Slowly drizzle in olive oil until well incorporated.
    2. Remove husk from avocado using a large metal spoon and place in center of a plate.
    3. Reserving 2 oz. of cheese and 2 tablespoons of dressing, mix together greens, cheese and vinaigrette.
    4. Place salad mix in the seed pit of the avocado, drizzle with dressing and garnish with hand crumbled Manchego cheese.
