Asparagus Stuffed Flank Steak

Flank steak is rolled up concealing a mixture of Dirty Martini Cheese Ball and asparagus spears.

Ingredients

  • 1-2 lbs. Flank steak
  • Salt and pepper to taste
  • 1/2 cup Robert Rothschild Farm Dirty Martini Cheese Ball
  • 10-12 Asparagus spears
  • Olive oil
  • Directions
    1. Pound flank steak in order to thin overall thickness of steak. Season both sides of steak with salt and pepper. Spread Dirty Martini Cheese Ball over one side of steak leaving 1-2 inches from one end uncovered.
    2. Cut ends of asparagus off and discard, then cut in half. Place a layer of asparagus over Dirty Martini Cheese Ball and roll steak up starting at one end.
    3. Rub outside with olive oil and place in a baking dish. Bake in a 400 degrees F oven for 15-20 minutes to desired doneness. Allow to rest 5 minutes before slicing.
