Apricot Mango Glazed Leg of Lamb

Tastes come alive with this leg of lamb and the wonderful tastes of our Apricot Mango Wasabi Sauce.

Ingredients

  • 1 Leg of lamb, boneless, 5 lbs.
  • 1 tsp. each Cinnamon, cumin, coriander, ginger, all ground
  • 1 jar Robert Rothschild Farm Apricot Mango Wasabi Sauce
  • 1-2 Tbsp. Rosemary oil
  • Directions
    1. Preheat oven to 425 degrees F. In a small bowl combine the cinnamon, cumin, coriander, ginger and Apricot Mango Wasabi Sauce. Remove netting from lamb, roll open the lamb. Season with salt and pepper, brush 1/2 the sauce thoroughly on the inside of the meat. Reroll the lamb and replace the netting. Place lamb on a rack in a large heavy roasting pan. Rub rosemary oil all over the outside of the lamb. Roast for 20 minutes, turning once. Reduce heat to 375 degrees F and continue roasting another hour. Brush the remaining sauce all over the roast. Reduce heat to 325 degrees F. Continue to cook until an internal temperature of 130 degrees F is reached. Remove from oven, allow to rest about 20 minutes before serving.
