Apricot Green Bean Salad

A refreshing salad containing rice vinegar, apricots, green beans, papaya, pistachios, feta cheese and our Apricot Spread.

Ingredients

  • Robert Rothschild Farm Apricot Spread
  • 1/4 cup Rice vinegar
  • 1/4 cup Apricots, dried, chopped
  • 1 1/4 lbs. Green beans, slender, trimmed
  • 1 Papaya, peeled, seeded, thinly sliced lengthwise
  • 3 Tbsp. Pistachios, unsalted, roasted, chopped
  • 1 1/2 oz. Feta cheese, crumbled
  • Directions
    1. Whisk together Apricot Spread and rice vinegar. Heat apricots, papaya, pistachios and vinaigrette in a large skillet.
    2. Steam beans until al dente, drain and add to vinaigrette. Toss ingredients together, arrange on a plate and top with crumbled feta.
