Apricot Baked Onions

Baked onions are stuffed with Apricot Spread and baked to create a tasty appetizer treat.

Ingredients

  • 1/3 cup Robert Rothschild Farm Apricot Spread
  • 2 Vidalia onions, whole, skinned
  • 4 oz. Butter, softened to room temperature
  • 1/4 cup Flour
  • 1/4 cup Brown sugar
  • 1 Tbsp. Olive oil
  • Directions
    1. Slice off root end of onions and toss in olive oil. Using a paring knife, hollow out a hole in the center of the onion.
    2. Mix flour, sugar and butter together until it crumbles.
    3. Stuff onion with 3 tablespoons of Apricot Spread and top with crumbs. Bake in a 350 degrees F oven or until onion is soft throughout.
